Ice  Cream:
1 13.5-fluid ounce can of full-fat coconut milk
¾ cup almond milk
2 Tbsp maple syrup
2 tsp matcha powder
2 tsp MIJA Superstar
1 tsp vanilla extract
⅛ tsp salt

1 Tbsp cacao nibs

Directions

Pre-chill the ice cream bowl in your freezer the night before. In a blender, combine the full-fat coconut milk, almond milk, maple syrup, matcha, and Superstar powder. Let chill for a couple of hours. Pour mixture into pre-chilled ice cream maker and churn according to manufacturer’s instructions (Mine took 15-20 minutes.). Serve immediately or pour the “batter” into a freezer-safe container and freeze. Although it will keep for up to 1 week, it is best served immediately. Top with cacao nibs.

Easy peasy lemon squeezy!

Servings: 2, Serving Size: 1 cup

Ingredients

1 large lemon
¾ cup strawberries
Mint leaves
2½ Tbsp water + ¼ cup water
2 dates, diced
4 tsp MIJA Superstar
1 cup cold water
Garnish: lemon slices and strawberry slices

Directions

In a small bowl squeeze the lemons and remove all the seeds. Make sure you have 2½ Tbsp of lemon juice. In a blender puree the strawberries and mint. Strain the mixture and set the liquid aside. (You can use the pulp in a smoothie later on). Put the dates in a saucepan over medium
heat with a ¼ cup of water. As the dates begin to break down help the dates dissolve by smashing with a fork or masher. Once the dates have completely broken down in the water, strain the liquid into the strawberry and mint liquid mixture and stir. Once the mixture has been combined, add the Superstar powder, 1 cup of water, and lemon juice. Stir well to blend. Pour into 2 glasses containing ice. Garnish with lemon and/or strawberry slices.
